INGREDIENTS:
- 1 ¼ cups of chopped dark
- 1/3 cup heavy cream
- 1 tbsp strawberry jelly
METHOD:
- Heat the cream in a heavy pan just until bubbles form around the edges, do not boil
- Remove the pan from the heat
- Add the chocolate
- Stir the chocolate until it is melted and smooth.
- Cover tightly, allow to come to room temperature and then refrigerate for six hours.
- Scoop out the truffles with the melon scooper. ELSE Spread it into a chocolate mould just as i have done.
- Pipe strawberry jelly into the center.
- Keep refrigerated, tightly covered until about 30 minutes before serving
