RED RIDING HOODS
My girls hate their veggies and concerned mom like me tried out this recipe, "VOLA"....THEY LOVE THEIR BEETROOTS and my girls gave this name to the cutlets...'RED RIDING HOOD'.
INGREDIENTS:
- BEETROOT 1 pc cut into small cubes and crushed slightly in the mixie.
- egg - 1
- salt - as required
- corriander leaves - 1/2 a bunch chopped finely
- chillie pwd- 1 tsp
- corriander powder - 1tsp
- garam masala - 1 tsp
- fennel seed powder(perinjeerakam)- 1/2 tsp
- bread crumbs- 1/2 cup(stale bread powdered in a food processor)
- potatoe- 1 boiled and mashed
- onions - 1 finely chopped
- ginger garlic paste- 1 tsp
- green chillies - crushed 1 tsp
- oil- for deep frying
- any crumbs for rolling the cutlets (eg: rawa,cruched cornflakes,breadcrumbs etc...)
METHOD:
1) Saute the onions, ginger,garlic paste and chillies in a frying pan till transparent.
2) To this add crushed beetroot and mix well...keep cooking on a medium to slightly high flame till the beetroot drains out all the water and mix becomes dry.
3) Next add to this the masalas and salt,and the coriander leaves.
4)Remove from flame and allow it to cool.
Once cooled add in the mashed potatoes,bread crumbs and beaten egg and mix well.
5) Make small balls out of the mixture and on a wet palm flatten it into the shape of cutlets of any shape and size you desire.
6) Roll the cutlets in the crumbs and deep fry till golden brown on medium flame.
7) Serve with tomato sauce.
